Aunt Ellie’s Mandel Bread
This is a great dairy-free recipe (if you use dairy-free chips)
Ingredients:
3 eggs
1 cup vegetable oil
1 cup sugar
3.5 cups all purpose flour
3 teaspoons baking powder
Pinch of salt
1 teaspoon vanilla
1 bag (10-12 oz) of chocolate chips
Cinnamon sugar to sprinkle on top
Instructions:
Preheat the oven to 350 degrees
Mix all the ingredients together (except cinnamon sugar) and form in to 2 loaves on a baking sheet lined with parchment paper. To form into loaves, you really need to push the dough together, so it has more of a dough like consistency than a pebble like consistency.
Sprinkle the tops with cinnamon sugar (I am VERY generous). About 1 to 1.5 tbsp each loaf.
Bake for 30 minutes and then slice into pieces 1 inch thick.
Lay on their sides and sprinkle with more cinnamon sugar - about 1 tbsp for each loaf.
Bake for 20 minutes. Let cool and enjoy.
These freeze well - and are the only way I stop myself from eating it all before the guests arrive!
