Cowboy Salsa Recipe

Before I was a stylist, I worked in advertising. Back in the 90’s, the agency I worked for was known for celebrity partnerships (think Cindy Crawford and Kay Jewelers). One of my first assignments was with Chef Park Kerr from Texas. He made this salsa the “fancy” way, roasting both the corn and the red peppers. Mine is the dumbed down (aka easy-peasy) version but tastes pretty darn good, at least according to my guests!

Ingredients:

  • 1 can black beans, drained and rinsed

  • 1 can sweet corn, drained

  • 1 jar roasted red peppers, cut into bite size chunks

  • 3 green onions, sliced

  • 2-3 cups salsa, I like Fresh Gourmet

  • 1 lime, juiced

  • Handful of cilantro, chopped

Instructions:

  1. Literally just mix it all together

  2. Let the flavors mellow for 1-2 hours in the fridge.

  3. Serve with tortilla chips and cut up veggies (or on burgers it’s great too)

A BIG crowd pleaser!
