Easy Watermelon Feta Summer Salad
This one comes straight from my sister-in-law, who just gets salads. She brought it over last week and it was divine! Fresh, salty, sweet, and bright. I’m already making it again for this weekend’s barbecue. It’s that good.
Ingredients
Watermelon, cut into bite-sized chunks
1 container of feta cheese, crumbled
1 jar pitted Kalamata olives, drained and halved
Fresh basil leaves, roughly torn
Salt and freshly ground black pepper, to taste
Olive oil, for drizzling
Juice of 1 lemon
Instructions
In a large bowl, combine the watermelon, feta, olives, and basil.
Drizzle with olive oil and squeeze fresh lemon juice over the top.
Season with salt and pepper to taste.
Toss gently to combine and serve chilled.
Notes
This salad holds up well for a few hours in the fridge—just toss again before serving.
You can prep the ingredients ahead of time and assemble just before guests arrive.
Want to make it a little fancy? Add a sprinkle of flaky salt or swap basil for mint.
